Banana Bread
Ingredients:
2 cups flower
1 cup sugar
1/4 teaspoon salt
3/4 teaspoon baking soda
Cinnamon to taste
The thought of nutmeg (small dash)
1 1/2 cup brown banana (about 3 big or 4 small)
1/2 cup margarine
1/2 teaspoon vanilla
1 teaspoon honey
1 teaspoon apple cider vinegar
1/4 cup oat milk
1/2 cup chocolate chips
1/2 cup of walnuts
Steps:
Preheat oven to 350F and line loaf pan with parchment paper and oil.
Mix dry ingredients in large bowl.
Place bananas on dry ingredients, pour wet ingredients over top, then mash banana into the dry.
Mix until lumps are gone but do not overmix or there will be less air in final result.
Coat chocolate and walnuts in flour then fold in.
Pour into pan and top with extra chocolate.
Bake for 45 min then cover with foil.
Bake for 10 more min or until you can stick a skewer in and it comes out clean or a thermometer reads about 190-200F.
Some let chill but I find it comes out okay warm.
Once chill you can store in fridge to keep longer.
Notes:
Bake bananas at 300F to brown them if they aren't already. Chill until able to touch.
If you don't have enough banana, apple sauce can be used.
I haven't tried yet, but these can also be made as muffins! Just shorten the initial time to 24 min.
I use a gas oven! Time may very with electric!
Cinnamon Rolls
Ingredients:
Dough
2 1/2 Cup all-purpose flour
3 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon cinnamon
5 tablespoon vegan butter (or margarine)
1 cup plant-based milk
1/2 teaspoon vanilla
1 teaspoon honey
Filling
3 tablespoon vegan butter
3/4 cup brown sugar
1 tablespoon cinnamon
Creamer
1/2 cup plant-based milk
Maple syrup to taste
Frosting
Plant-based milk
Powdered sugar
Honey
Steps:
Dough:
Grease cooking dish (about 8x8)
Combine dry ingredients.
Cut in the butter with fork then stir in milk, vanilla, and honey.
Once clumping use your hands to fork the dough until all mixed. (If too runny add 1/4 of the original dry ingredients at a time until thicker. Doesn't need to be THICK, just holding shape enough to roll.)
Flour your hands, rolling pin, and smooth surface. Form the dough into a ball then roll it out into an about 11x13in rectangle. If sticking too bad use more flour on surfaces or just use your hands to flatten.
Filling:
Spread butter over the whole surface of dough.
Combine brown sugar and cinnamon. Sprinkle this over the dough then press into butter.
On long edge slice the sheet into thirds, then slice those into thirds for a total of 9 strips.
Roll these tightly and place into dish equally apart.
Preheat oven to 375F while rolls chill in the fridge.
Once heated pour the creamer over the rolls and bake for 20-25min or until they are golden brown.
Icing:
Simmer ingredients until it has evaporated/thickened into an icing.
Notes:
Careful not to overcook. Creamer will make they look moist or gooey.
